Cut into large pieces and boil in salted water.

Drain the water, add new water and cook until tender, about 5 hours.

Should be soft. Drain the water. We cut the cooled udder into thin slices, frying on both sides until golden brown.

We put it in a roasting pan with onions, sprinkle with carrots, black ground and allspice, add bay leaf and simmer until the vegetables are ready, adding a little water.

Put on a plate, pouring sour cream.

Eat with porridge, potatoes, greens, vegetable salad.
