Lard (example of a salting recipe). Easy peasy. Cut into pieces, stuff with garlic, dip in a mixture of salt with garlic and hot pepper, ground black and allspice, and ground bay leaf. Lay in layers tightly, filling the voids with salt. A week is being prepared. Store in a cool, dark place. You can stuff it into a jar, cover with a nylon lid and lower it into the basement. You can pour cold water into the jar. From personal experience, I concluded that it is better to store with water (in brine). Lard recipe.
