Shurpa is usually prepared when fresh lamb or beef is eaten.

It will take half a kilogram. The same amount of potatoes, 2-3 onions, 2-3 medium-sized carrots, 2-3 tablespoons of tomato paste, 2 tablespoons of good quality butter, ground black salt, allspice, 2 bay leaves, about five peppercorns. Pour the washed meat with three liters of cold water, add bay leaf, peppercorns. It is necessary to bring to a boil and remove the resulting foam, salt and cook at low temperature for about 3 hours. Cut onions and carrots into small cubes and fry in butter.

Strain the broth, separate the meat from the bones and cut into small pieces. Heat a spoonful of butter in a skillet and brown the pieces of meat. You also need to add onions. Place the diced carrots, add the tomato paste and simmer for about 5 minutes. Peel, wash and cut the potatoes into small cubes. Bring the meat with vegetables to a boil. Throw in the potatoes, salt and pepper and cook for another 20 minutes. Eat ready-made shurpa sprinkling with fresh herbs. Bon Appetit.
